The Parma pigs are not fed the usual 'slop' that most pigs get - these special animals have a diet of chestnuts and whey which produces this fine quality meat. The whey is the result of the Parmesan cheese-making process. The village of Langhirano near Parma city makes some of the best hams in the area.

Depending on the size of the prosciutto it can take 9 to 18 months before it is ready, in fact 'Traditional prosciutto' is cured for over 3 years. The Parma ham is not smoked, as other hams are, but air-dried and cured with sea salt.
