An orchard of olive trees is a common sight in Spain as it has become the world's leading olive and olive oil producer and exporter. Spain produces an annual average of approximately 600,000 to 1,000,000 metric tons of olive oil and only 20% is exported.

... does not produce fruit until somewhere after the fifteenth year which is why an orchard is full of olive trees of various sizes. The olive tree reaches maturity at approximately forty years of age and on an average starts to go downhill after about one hundred and forty years.

From the end of November until March each year the harvesting from the olive tree is done either by hand or by stick. It takes a great deal of picking and quite a few olives to make just one kilo of oil.

The process of making olive oil has come a long way since earlier years and there are tricks to the trade of growing great fruit to produce some of the finest oil.
