In the 12th century King Louis Xll of France declared the fleur-de-lis, otherwise known as the Iris, to be the symbol for France.
The Iris is a perennial herb and can be grown either from a rhizome or in dry climates from bulbs. The region around Gourdon in Provence is the centre of the French perfume industry and the Iris rhizomes can produce a fragrant, oily compound known as 'iris butter', making the Iris not only beautiful but useful as well.
