This type of Ash tree is a South European flowering Ash that blossoms early in summer and produces many clusters of white colored flowers. When each Ash tree is in full blossom it can create the opportunity for a magnificent picture. The bark of the Ash tree provides a sugary sap called Manna which is used for a number of different medicinal purposes.
The Ash tree grows to about 15 or 16 feet tall and when it reaches about eight to ten years of age the collection of the sugary sap begins. In July and August when the weather is warmer which is essential for a good crop, a series of vertical incisions are made in the bark and in September and October large pieces of incrustation are collected.
